Fruity, crunchy and simply irresistible. Our couscous salad with Farmer's Snack apricots and almonds InSalt brings the perfect balance of sweetness, spice and freshness to your plate. Perfect as a light lunch or as a side dish for a barbecue.
Ingredients
150 g couscous
1 tsp curry
3 tbsp olive oil
1 tbsp agave syrup
70 g Farmer's Snack Apricots (or organic apricots)
50 g Farmer's Snack Almonds InSalt
5 stalks mint
8 stalks parsley
1 handful baby spinach leaves
Salt and pepper
1 pomegranate
Preparation
- Prepare the couscous according to the packet instructions.
- Finely chop the parsley, mint and baby spinach leaves.
- Cut the apricots into small cubes.
- Season the finished couscous with curry and stir in the agave syrup and olive oil.
- Fold the chopped almonds, apricots, herbs and spinach into the couscous.
- Sprinkle over the pomegranate seeds and season with salt and pepper to taste.
Tip:
Add a little lemon juice for an extra fresh touch.
